Instead of remaining classic, I baked this amazing saffron Lussekatter cake\u00a0for Saint Lucy\u00b4s\u00a0Day. We don\u00b4t celebrate it here in Austria, but for me it\u00b4s a retrospective to the time when I was living in Sweden. I know that I am a little bit late because it was celebrated on december\u00a013th, but I think this recipe is really worth to be shared \u2013 and I promise the smell of this cake will turn your kitchen into a little christmas bakery.<img data-recalc-dims=\"1\" decoding=\"async\" data-attachment-id=\"3943\" data-permalink=\"https:\/\/www.vollmundig.org\/home\/2016\/12\/18\/lussekatter-cake\/lussekatter-1282-3\/\" data-orig-file=\"https:\/\/i0.wp.com\/www.vollmundig.org\/home\/wp-content\/uploads\/2016\/12\/Lussekatter-1282-3.jpg?fit=%2C&amp;ssl=1\" data-orig-size=\"\" data-comments-opened=\"1\" data-image-meta=\"[]\" data-image-title=\"lussekatter-1282-3\" data-image-description=\"\" data-image-caption=\"\" data-medium-file=\"https:\/\/i0.wp.com\/www.vollmundig.org\/home\/wp-content\/uploads\/2016\/12\/Lussekatter-1282-3.jpg?fit=300%2C300&amp;ssl=1\" data-large-file=\"https:\/\/i0.wp.com\/www.vollmundig.org\/home\/wp-content\/uploads\/2016\/12\/Lussekatter-1282-3.jpg?fit=1024%2C1024&amp;ssl=1\" class=\"alignleft size-full wp-image-3943\" src=\"https:\/\/i0.wp.com\/www.vollmundig.org\/wp-content\/uploads\/2016\/12\/Lussekatter-1282-3.jpg?w=800\" alt=\"lussekatter-1282-3\" \/><br \/>\n&nbsp;<\/p>\n<h3>Lussekatter Cake<\/h3>\n<p>&nbsp;<\/p>\n<h5>Ingredients<\/h5>\n<p>400g spelt flour<br \/>\n60g coconut butter<br \/>\n2tbsp honey &#8211; or more if you like it sweet<br \/>\n200ml almond milk or another plant milk<br \/>\n1 packet dry yeast<br \/>\n1 sachet saffron<br \/>\n1 pinch salt<\/p>\n<p>6tbsp apple puree<br \/>\n1 \u00bd tbsp cinnamon<br \/>\nhandful of raisins<\/p>\n<h5>Directions<\/h5>\n<p>1. Lightly oil and dust a loaf pan tin. Don\u00b4t forget to shake out the excess! <em><strong>My tip:<\/strong> line your loaf pan with baking paper instead of oil and dust!<\/em><br \/>\n2. Combine all dry ingredients in a large bowl.<br \/>\n3. Melt butter in a pot over low heat. Add honey and milk. Dissolve the yeast and stir in saffron. Add the mixture to the dry ingredients and knead to a smooth dough. Let it rest for at least 1 hour.<br \/>\n4. Preheat the oven to 180\u00b0C.<br \/>\n5. Roll dough to form a rectangle. Spread apple puree, cinnamon and raisins in an even layer. Leaving 2cm border of dough.<br \/>\n6. Roll tightly. Cut the dough down the middle with a knife. Do not cut through the back end.<br \/>\n7. Twist ends overtop each other. Don\u00b4t cut side toward the top.<br \/>\n8. Put the dough in the loaf pan.<br \/>\n9. Aber dennoch, Weihnachten naht. In Schweden wurde am 13. Dezember das traditionelle Luciafest gefeiert. Seitdem ich in Schweden studiert habe, backe ich jedes Jahr zu dieser Zeit Lussekatter. Nicht zuletzt, weil sie einfach gro\u00dfartig schmecken, sondern auch weil\u00a0sie mich an diese Zeit erinnern. Dieses Jahr habe ich mich gegen den Klassiker und stattdessen f\u00fcr einen Lussekatter Kuchen, gef\u00fcllt mit Apfelmus, Rosinen und Zimt, entschieden. Eine Kuchenform mit \u00d6l ausfetten und mit Mehl best\u00e4uben. Das \u00fcbersch\u00fcssige Mehl ausleeren.<em> <strong>Mein pers\u00f6nlicher Tipp:<\/strong> Die Kuchenform mit Backpapier auslegen.<\/em><br \/>\n2. Mehl, Salz und Hefe in eine R\u00fchrsch\u00fcssel geben.<br \/>\n3. Butter in einem Topf schmelzen. Honig in der lauwarmen Butter aufl\u00f6sen. Milch hinzuf\u00fcgen und die Hefe darin aufl\u00f6sen. Safran einr\u00fchren. Zu den trockenen Zutaten geben und zu einem glatten Teig kneten.<br \/>\n4. Mindestens 1 Stunde zugedeckt ruhen lassen.<br \/>\n5. Backofen auf 180\u00b0C vorheizen.<br \/>\n6. Teig nach der Ruhephase auf eine mit Mehl best\u00e4ubte Arbeitsfl\u00e4che geben und zu einem Rechteck ausrollen.<br \/>\n7. Apfelmus, Zimt und Rosinen gleichm\u00e4\u00dfig darauf verteilen. 2cm am Rand frei lassen.<br \/>\n8. Teig der L\u00e4nge nach einrollen. Teig mit einem Messer der L\u00e4nge nach halbieren.
